Pasture Raised Poultry Brine Recipe
1/2 cup Salt (Kosher)
1/2 cup Sugar- Maple Syrup, Honey, Brown Sugar
Dissolve in a large stock pot of water. Enough to completely cover and submerge the bird.
Add spices as desired. (Garlic, thyme, rosemary, basil, etc. Sky’s the limit!)
Soak for 24 hours/overnight.
Roasting
Place the chicken in a glass Pyrex pan or other available roasting pan.
Add ¼ “ of water in the pan to maintain moisture.
Add spices as desired
Cook at 350° for approximately 2 hours.
The outside skin will should be nice and crispy. Allow to rest on the stove 10 minutes before carving to allow the juices and meat to relax and settle into the meat.
